Skillet Teriyaki Chicken with Fragrant Rice

Ingredients

Main:

  • Boneless chicken thigh (or breast fillet), diced 2–3 cm - 700 g
  • Jasmine rice (or long-grain), rinsed until the water runs clear - 250 g
  • Onion, finely chopped - 1 pc
  • Garlic, finely chopped or grated - 3 cloves
  • Fresh ginger, finely grated - 15 g
  • Soy sauce (preferably naturally brewed) - 100 ml
  • Honey (or brown sugar) - 2 tbsp
  • Rice vinegar (or apple cider vinegar), for balancing flavor - 1 tbsp
  • Cornstarch (or potato starch), to thicken the sauce - 2 tsp
  • Water, for the sauce - 120 ml
  • Neutral vegetable oil, for frying - 2 tbsp
  • Sesame seeds, for serving (optional) - 1 tbsp
  • Green onions/scallions, thinly sliced (optional) - 2 pcs

Spices & Seasonings:

  • Salt - to taste
  • Ground black pepper - to taste

Instructions

Prepare the rice

Rinse the rice in 5–7 changes of water until clear to remove excess starch and keep it fluffy. Transfer the rice to a pot, add 400 ml water and a pinch of salt. Bring to a boil over high heat, then reduce to the lowest heat and simmer for 12 minutes. Remove from the heat, cover the pot with foil (instead of a lid), and let stand for 10 minutes without opening: the rice will finish steaming and become more fragrant.

Tip: If the rice sticks to the bottom, the heat is too high: once it comes to a boil, keep it on the lowest heat.

Dice and pat the chicken dry

Cut the chicken into 2–3 cm cubes. Pat the pieces dry with paper towels: a dry surface browns faster and gives a tasty crust. Lightly pepper (don’t salt yet so you don’t draw out juices).

Tip: Thigh stays especially juicy, but breast works too—just don’t overcook it.

Mix the teriyaki sauce

In a bowl, whisk together the soy sauce, honey, vinegar, and water. Separately, mash the starch with 2 tablespoons of this mixture until smooth and lump-free, then return the starch slurry to the bowl and whisk again. The sauce should be smooth.

Tip: Always dissolve starch in a cold liquid so the sauce thickens evenly and without lumps.

Sear the chicken until nicely browned

Heat a skillet over medium-high heat for 1–2 minutes, then add the oil. Spread the chicken in a single layer. Sear for 4–5 minutes without stirring so a crust forms, then flip and cook 3–4 minutes more. If the chicken releases a lot of liquid, let it evaporate—you want frying, not stewing.

Tip: Don’t overcrowd the pan: if needed, sear in two batches or you won’t get a crust.

Add the onion, garlic, and ginger

Push the chicken to the edges of the skillet. Add the onion to the center and cook for 2 minutes until translucent, stirring. Add the garlic and ginger and cook 30–45 seconds until very fragrant, then mix everything together.

Tip: Don’t overcook the garlic and ginger: a brief warm-through is enough, otherwise they can turn bitter.

Glaze the chicken with the sauce

Stir the sauce in the bowl again (the starch may have settled), then pour it into the skillet. Reduce the heat to medium. Stirring, bring to an active boil: after 1–2 minutes the sauce will start to thicken and turn glossy. Cook 2–3 minutes more, until the chicken is fully coated in a sticky caramel glaze. Taste and adjust: a drop of vinegar for more brightness, a bit more honey for a softer taste. Add salt only at the very end and sparingly.

Tip: The right consistency: the sauce coats a spoon and drips off slowly, leaving a thin film.

Serve

Fluff the rice with a fork and portion onto plates. Spoon the chicken and sauce over the top. Sprinkle with sesame seeds and sliced green onions/scallions if desired. Serve immediately while the glaze is shiny and the aroma is at its brightest.
